On their 1,450-hectare ranch, they raise 2,500 Black Angus cattle using regenerative methods. Thanks to their commitment, Wilmot Farm sequesters an impressive 35,000 tonnes of carbon annually, far outweighing the 2,000 tonnes of methane their cattle emit. As he expertly broke down the cuts, Harry shared insights into each section, explaining the uses and flavors of cuts like the <strong>Picanha<\/strong>, <strong>Rump Steak<\/strong>, <strong>Flank<\/strong>, and <strong>Short Rib<\/strong>. The menu was a testament to the quality and flavor of <strong>Wilmot\u2019s grass-fed beef<\/strong>, prepared in ways that highlighted each cut\u2019s unique characteristics:<\/p>\n<ul>\n<li><strong>Outside Flat<\/strong>: Served as carpaccio with chanterelles and parmesan, flash-grilled with asparagus and truffle jus.<\/li>\n<li><strong>Shin Shank<\/strong>: Braised in red wine with blue cheese polenta, carrot, and mushroom; prepared as a rich tartare.<\/li>\n<li><strong>Flank<\/strong>: Flank pinwheels with Bayonne ham, Comt\u00e9 cheese, and rocket &#8220;pistou,&#8221; alongside Rattes potatoes; peppered and seared with B\u00e9arnaise sauce.<\/li>\n<li><strong>Short Rib<\/strong>: Smoked and sous-vide with red wine and figs, complemented by a pasta sheet.<\/li>\n<li><strong>D Rump<\/strong>: Cold roast with mint pesto, pickled cucumber, yogurt, and tahini; cold roast with avocado and wasabi mayo on puff pastry.<\/li>\n<\/ul>\n<p>Each dish was paired with a selection of Australian wines, adding another layer to the evening\u2019s flavors.
